Goenka obtained a Master of Business in Hospitality Management from the Victoria University of Technology in 2003 and is a Certified Sommelier from Court of Master Sommelier. Started his career withCrown Casino- Melbourne, Australia, Trader Vic’sRestaurant and Mai Tai Bar in Atlanta, Destin, Chicago, Los Angeles. Various restaurants in Los Angeles and Orange County including Stonehill Tavern by the Michelin Chef Michael Mina at the Forbes 5-star St. Regis Resort Monarch Beach.
Goenka also took part in some interesting projects such as opening the Echo & Rig Butcher and Steakhouse in Las Vegas for Chef Sam Marvin. He was a Group Operations Director at award-winning hospitality group Maximal Concepts in Hong Kong, where he was instrumental in restructuring the Food and Beverage operations and opening several unique cutting-edge concepts including a partnership with Mercedes[1]Benz to open Mercedes Me. Pallava was also involved with Mott32 from Hong Kong. Under his leadership, Maximal Concepts became one of the most awarded restaurant groups in Asia – even garnering the distinction for one of their bars,Stockton, as Asia’s 50 Best Bars in 2016 by Lifestyle Asia.
Goenka along with Specialty Restaurants Corporation as Regional Managing Director, oversaw the operations of several dining destinations including the iconic waterfront restaurant The Rusty Pelican in Miami bringing it up as one of the top independent high grossing restaurants. Further, Goenka has been COO for Bulldozer Group- US & Hong Kong operations, overseeing several concepts across Miami, NYC & Hong Kong. In this role he was instrumental in opening NYC market with Osteria La Baia in midtown Manhattan, as well as managingTanuki in Miam and Ichu in Hong Kong.
Most recently Goenka was with legendary brand Zuma as Vice President of Operations & Development North America and is responsible for all the North America operations and future development of the region. Other than hospitality, Goenka is passionate about travelling and exploring new cultures and cuisine, hikes in nature with his wife and practices professional and personal self-development.
